Here are the ingredients for making crispy potato skins.
- The skins of 1 kg of organic potatoes
- Chilli (optional)
- Extra virgin olive oil
- 1 clove of garlic
- 2 slices of dry bread (at least 2-3 days old!)
- Rosemary and / or pecorino cheese (optional)
Coarsely dry the potato peels and cut the bread into cubes.
In a pan, heat 2 tablespoons of oil and brown the bread. When this is crunchy, set it aside. Pour another tablespoon of oil, let it heat up and add the garlic clove. Add the potato skins and let them brown until they are crunchy.
Season the potatoes with salt, chilli and oregano. Add the bread and mix. To garnish, add a few flakes of cheese and chopped rosemary.

For a lighter dish, you can mix the potato skins with a drizzle of olive oil, salt and garlic powder. Place everything in the oven for at least 20 minutes.
Fried potato skins in batter
Here are the ingredients to prepare thefried potato peels in batter.
- Peels of 3 large potatoes
- 150 ml of sparkling water
- 100 g of flour
- 1 level teaspoon of baking powder
